I found this amazing recipe. If you love sweet potatoes and kale. I have got a meal for you. It’s easy and tasty, which is what you want when you eat! I would recommend a cast iron skillet. 1st thing you need is sweet potatoes and kale! Dice or cube 2-3 peeled medium sized sweet potatoes. In your skillet, put 2tbs of olive oil and heat on medium. Place the cubed potatoes in the skillet and cover. Cook till fork tender (about 8-9 minutes)

  • Note : If you want to parboil larger potatoes after peeling, it will help when cubing. Potatoes are very dense and cutting them is difficult if they are large. 

Remove cover and add a tbs each of cumin, coriander, paprika and garlic powder. Then a light pinch of salt and pepper. (all of these spices should be in your pantry)

Stir potatoes till the spice mixture covers all or most of the cubes. Add kale (no stems) and cover pan till kale is wilted.

Remove cover and using a spatula press mixture down till slightly compact. Take a small spoon and open 3-4 wells in the mixture and crack eggs and drop into these wells. Add a few tsp of water and cover pan. Turn heat down to lowest number your burner (1-2) then steam until eggs turn white. Remove lid and spoon out each section with an egg and serve. A little hot sauce always helps.
